Saltine Toffee

One of my favorite holidays treats is homemade Saltine Toffee. This recipe uses Saltine crackers as a base to make a delicious and easy candy that’s crunchy, salty, sweet and full of rich chocolate. You can be as creative or gourmet as you wish by adding chopped nuts, crushed candy canes, colored sprinkles, dried fruit or drizzled white chocolate to decorate and embellish your toffee. Saltine toffee makes for an impressive holiday gift that any candy lover is sure to enjoy.

You start out by lining a baking sheet with aluminum foil and arranging saltine crackers evenly in a single layer. Next, prepare the syrup by melting and boiling butter and brown sugar. After pouring the hot syrup over the crackers and baking for 7 minutes, you then sprinkle the crackers with 2 cups of your favorite chocolate chips – I use a combination of semi-sweet and milk chocolate, but feel free to experiment with different combinations of chocolate based on your favorites. Once the chocolate is added, place the pan back into the oven (that has since been turned off) for a few minutes until the chips melt. When you take the pan out of the oven, spread the chocolate evenly all over the toffee and saltine layer. Finally, add your preferred combination of sprinkles, nuts, crushed candy canes or dried fruit. Enjoy this crazy delicious and easy candy treat!

Saltine Toffee

Ingredients
35-40 Saltine Crackers
2 sticks of butter (1 cup total)
1 cup brown sugar
2 cups of chocolate chips (1/2 semi-sweet, 1/2 milk chocolate or to taste)
1 cup chopped nuts, sprinkles, crushed candy canes and/or dried fruit as desired (I used chopped walnuts and colored sprinkles)

Directions

  • Preheat oven to 350 degrees.
  • Cover a cookie sheet with aluminum foil and spray generously with nonstick cooking spray.
  • Place the crackers in a single layer on the cookie sheet, leaving no empty spaces in between them.

  • Combine butter and brown sugar in a saucepan over medium-high heat and bring to a boil. Stir while the butter melts and boil for 3 minutes.
  • Pour mixture over saltines. Cover completely with syrup.
  • Baked for 7 minutes or until bubbly.
  • Remove from oven.
  • Sprinkle with chocolate chips.

  • Pop back into oven (that has been turned off) for 1 – 3 minutes or until the chocolate is melted.
  • Spread chocolate evenly with a knife like frosting.
  • While the chocolate is still warm, sprinkle with toppings (chopped nuts, dried fruit and/or sprinkles).
  • Chill in refrigerator.
  • Break into irregular pieces.

  • Store in airtight container in cool spot.
