    Vegetable Soup

If you may have been overindulging a little bit more than usual lately, a tried and true way to lose a little weight and feel better is to fill up on tasty, nutritious vegetables, and my Skinny Vegetable Soup is the perfect choice. You start with a simple base of onions, leeks, celery and carrots, and then add some tomatoes, chicken or vegetable stock, butternut squash, pinto beans and lots of kale. I used fresh thyme to flavor the soup, but there are many different herbs that would work well (like maybe rosemary or even cilantro!), so feel free to try your favourite. The result is a comforting, hearty and good-for-you soup that doesn’t taste “healthy” at all. I topped it with a little grated Parmesan for a salty, cheesy kick. Delicious. Enjoy!!

Whiskey Barbecued Chicken & Lemon Kale Salad

It’s starting to feel like summer, so that means it’s time to bring out the grill. My boyfriend and I wanted to try out our brand new roofdeck, so I prepared a simple barbecue to get us in the summer spirit. I decided to make my own barbecue sauce for the first time, and it turned out so good I do not think I will ever buy pre-made barbecue sauce again. My Whiskey Barbecue Sauce is made with, yes, whiskey along with garlic, ketchup, tomato paste, brown sugar, Worcestershire sauce and vinegar. The combination is tangy and sweet, with a definiate kick of whiskey. Combined with a spicy BBQ dry rub, the chicken grills up to perfection to create a full-bodied, smoky and sweet barbecue flavor.

    Kale & White Bean Soup

Last night I made a delicious and hearty Kale & White Bean Soup. Overflowing with cannellini beans, greens, carrots, onions and chunks of kielbasa, this soup is bursting with flavor! It’s easy to make and perfect for a healthy and quick weeknight dinner. Serve with thinly sliced pieces of toasted ciabatta bread and freshly grated Parmigiano Reggiano.
