Spiced Banana Bread with Lemon Glaze

Here is a family recipe for a deliciously moist and scrumptious Banana Bread. It’s a true classic that is chock full of bananas unlike many recipes for banana bread which shockingly sometimes contain only one banana! It also contains warm spices such as nutmeg, allspice and cloves that give it a lovely aroma and rich flavor. The finishing touch is a tart lemon glaze that complements the sweetness of the ripe bananas beautifully. Bake this bread to have around the house for breakfast or an afternoon snack. This is the real deal. Enjoy!

    Mushroom and Stilton Quinoa Risotto

I’m always looking for healthy alternatives to my comfort food favorites, so when I came across this recipe for Mushroom and Stilton Quinoa Risotto from The Art of Eating Well, I had to try it. I’ve been enjoying several recipes from this book recently and totally adore the clean cooking philosophy of the book’s authors, Jasmine and Melissa Hemsley. This recipe uses quinoa as the base for the risotto and does not contain any rice. Using quinoa not only makes it more nutritious and protein-packed, but it also has the added bonus of being easier and quicker to make. I found some beautiful chanterelle and chestnut mushrooms from my local farmer’s market that worked perfectly for the dish, in addition to some some strong, high-quality stilton cheese. The cheese added loads of creaminess and flavor, while still keeping the overall dish light and fresh. I can’t wait to experiment with other types of quinoa risottos, the possibilities are endless!

Lemon Dijon Herb-Crusted Grilled Pork Tenderloin

This is my second post this season on grilling (yes, summer hasn’t even started!) and I’m thrilled to share this recipe for marinated grilled pork tenderloin. With a hearty dose of fresh thyme and rosemary, this recipe takes on many flavors that all blend together perfectly. If you like mustard and tangy sauces, this one is for you. In order to fully flavor the pork, you have to prepare this marinade the night before and let the meat marinate in the refrigerator overnight. The marinade is somewhat thick and is loaded with fine herbs, creating a sort of “crust” on the pork. Tonight my boyfriend grilled the pork tenderloin we had marinated overnight and it came out tender and juicy, with a definite kick of dijon contrasting beautifully with the freshness of the herbs. Bon Appétit!

Whiskey Barbecued Chicken & Lemon Kale Salad

It’s starting to feel like summer, so that means it’s time to bring out the grill. My boyfriend and I wanted to try out our brand new roofdeck, so I prepared a simple barbecue to get us in the summer spirit. I decided to make my own barbecue sauce for the first time, and it turned out so good I do not think I will ever buy pre-made barbecue sauce again. My Whiskey Barbecue Sauce is made with, yes, whiskey along with garlic, ketchup, tomato paste, brown sugar, Worcestershire sauce and vinegar. The combination is tangy and sweet, with a definiate kick of whiskey. Combined with a spicy BBQ dry rub, the chicken grills up to perfection to create a full-bodied, smoky and sweet barbecue flavor.

If you are a Top Chef watcher, you will remember Carla and her scrumptious and hearty comfort-food-style cooking. With egg whites to puff up the cake, a healthy dose of butter, sugar, milk, fresh lemon juice and a kick of orange liqueur, you will find these pudding cakes irresistible. Once baked, the pudding forms a golden-brown cake on top and leaves soft pudding on the bottom, s

    Homemade Lemonade

Ever since I got back from the Caribbean this spring, I have been trying to recreate the light and refreshing, fresh-squeezed lemonade I enjoyed daily at a St. Martin resort. Although making lemonade from scratch may seem easy (squeeze some lemons and add some sugar and water?), there is truly an art to creating the perfect sweet, but not too sweet, lemonade.

    Lemon Anginetti (Italian Drop Cookies)

Today I’d love to share a recipe for one of my favorite Italian cookies… Lemon Anginetti.

These delicious Italian drop cookies are traditionally made for holidays and celebrations, but are a delightful choice for anytime of year. Although there are many variations of the traditional recipe, my favorite is the addition of lemon extract to create a light, scrumptious flavor. Recipe is after the jump!
