Cherry Vanilla Popsicles
My latest food obsession: popsicles. I got a Zoku Classic Pop Mold from my Mom this Christmas and I have been having a blast experimenting with different homemade popsicle recipes. It’s very easy to make popsicles into a healthy snack full of nutritious ingredients like fruit, Greek yogurt and a small amount of honey or agave nectar. Of course, you can go wild with “ice cream” style pops complete with half & half and melted semisweet chocolate, but since I am on my New Years health kick, I am sticking with the low-cal varieties for now.
One of my favorite combinations is cherry and vanilla. To make the pops, I simply took fresh cherries and blended them with nonfat plain yogurt, agave nectar and vanilla to create the mix. Then, I filled up my Zoku popsicle molds, froze them for 4 hours and voila, delicious homemade popsicles appeared. You will be amazed at how tasty these pops are and what a delightful and fun snack they make. Popsicle molds are easily available at kitchen stores as well as on Amazon – I like the classically elegant shape of my Zoku one, but there are lots of different options out there that are equally as great, including some cute mini popsicles for kids. Cherry Vanilla Popsicles
Makes 6 (3 fl oz) popsicles
Ingredients
1 cup fresh cherries, pits and stems removed
2 cups nonfat plain Greek yogurt
2 tablespoons agave nectar (or honey if you prefer)
1 teaspoon vanilla extract (or vanilla bean paste if you have it)
Equipment
Popsicle molds
Directions
Place all ingredients in a food processor and process until smooth.
Pour mixture into popsicle molds and insert sticks according to the directions of your popsicle mold.
Freeze for at least 4 fours or until totally frozen.
Run popsicle molds under warm water for a few seconds at a time to release popsicles from the mold.
Enjoy!
